How to Make Sweet Potatoes with Marshmallows

For the casserole

  • 3 cups of sweet potatoes, mashed
  • 2 eggs, lightly beaten
  • 1/2 cup of sugar
  • 1/2 teaspoon of salt
  • 1/4 cup of butter, melted
  • 1/4 cup of cream or milk
  • 1-1/2 teaspoons vanilla extract

For the topping

  • 1/2 cup of brown sugar
  • 1/3 cup of flour
  • 1/2 cup of walnuts, chopped
  • 1/2 cup of pecans, chopped
  • 3 tablespoons of butter, melted
  • 1 cup of mini marshmallows, optional

Directions:

  • Preheat the oven to 350 degrees.
  • Mix the casserole ingredients together until well blended. Spread into a buttered casserole dish.
  • Except the marshmallows, mix the topping ingredients together and sprinkle over the casserole. Bake uncovered for 35 minutes.
  • If topping with marshmallows, place on the casserole and bake for an addition five to seven minutes or until marshmallows are melted.
