Sweet Potato Casserole with Marshmallow Fluff

• 3 cups mashed sweet potatoes (peel, cut in about 3 pieces and boil until soft)
• 1 cup sugar
• 2 beaten eggs
• 1/2 cup milk
• 1 teaspoon vanilla
• pinch salt
• 1/3 cup butter
• 1 cup mini marshmallows

  Beat ingredients together until smooth. Pour in 2 qt. buttered baking dish.

• 1 cup brown sugar
• 1/3 cup flour
• 1/2 cup butter
• Optional: 1 cup chopped nuts.

  Spread topping over and bake at 350 for 30 - 40 minutes. If topping with marshmallows, place on the casserole and bake for an addition five to seven minutes or until marshmallows are melted.
